CONSUMER WILLINGNESS TO PAY FOR NUTRITIONAL INFORMATION: IMPLICATIONS FOR FOOD PRICING AND COMMERCIAL SUCCESS

Abstract

As health consciousness increases, consumers are becoming more interested in the nutritional content of their food. This study investigates consumer willingness to pay (WTP) for detailed nutritional information and explores its implications for food pricing and commercial success. Using a combination of survey data and experimental auctions, we assess how different types of nutritional information such as calorie count, macronutrient breakdown, and micronutrient details affect consumer purchasing decisions. Our findings reveal that consumers are generally willing to pay a premium for transparent nutritional information, with varying degrees of willingness depending on the type and depth of the information provided. The study also explores demographic factors influencing WTP, including age, income, and education level. We analyze the potential impact of integrating detailed nutritional information into food pricing strategies and discuss how businesses can leverage this information to enhance their market positioning and achieve commercial success. The results suggest that incorporating comprehensive nutritional labels can be a strategic tool for food companies, not only in meeting consumer demands but also in differentiating their products in a competitive market. This research provides valuable insights for policymakers, food manufacturers, and retailers aiming to align their offerings with evolving consumer preferences and improve overall market performance.
