THE IMPACT OF ONLINE FOOD DELIVERY PLATFORMS ON THE GROWTH AND PROFITABILITY OF RESTAURANTS IN INDIA
Abstract
The rise of online food delivery platforms such as Swiggy and Zomato has revolutionized India's restaurant industry, reshaping its growth and profitability dynamics. This study examines the transformative impact of these platforms, driven by advancements in digital technology, changing consumer behavior, and widespread access to smartphones and high-speed internet. The increasing demand for convenience has made online food delivery a preferred choice due to its accessibility, speed, and diverse offerings, enabling restaurants to expand their market reach, boost order volumes, and enhance brand visibility. However, this growth comes with challenges. High commission fees imposed by platforms significantly affect restaurant profit margins, while ensuring delivery efficiency, food quality, and customer satisfaction presents operational difficulties. The emergence of cloud kitchens and virtual brands offers a cost-effective solution, allowing restaurant owners to operate without the expenses of traditional dining setups. Using a mixed-method approach that combines qualitative interviews and quantitative surveys, this study evaluates how online delivery services influence market expansion, operational strategies, and financial outcomes. Findings reveal that while these platforms have driven increased consumer reach and sales, profitability remains constrained by platform fees and logistical challenges. Nonetheless, innovative models like cloud kitchens and optimized use of digital platforms demonstrate potential for sustainable profitability. The study concludes that the long-term success of restaurants in India hinges on their adaptability to the evolving online food delivery ecosystem. Balancing the advantages of digital platforms with strategic cost management and superior service delivery is critical for achieving sustainable growth in this competitive landscape.
